It is our 15th wedding anniversary today and I decided to make my husband his favourite pie for dessert – lemon meringue. This will be the final course in our dinner tonight which will include: grilled scallops, bacon wrapped sirloin, saffron coconut rice and grilled asparagus.
As much as I wanted to photograph the soft pillowy mounds of meringue, I resisted and took a step back to photograph the finished pie amongst the mess I made putting this gift together.
I love lemon meringue pie 🙂 Yours looks delicious.

That is beautiful! I’ve tried (and done pretty well) with lemon cream pie, but I’m not sure how I’d do with meringue. What recipe do you use?
I was short on time today, so I cheated a little. I used a purchased gluten free crust (I usually make my own) and then I made the filling using the Sherriff (Dr. Oetker) Lemon Pie Filling mix. The meringue, I made using three egg whites and a 1/4 cup of sugar. Most recipes call for only two egg whites, but I like a really fluffy meringue so I added in an extra.
